Buffalo Burgers With Wild Mushrooms Recipe

This recipe uses ground buffalo to make a simple and hearty burger. Wild mushrooms round the dish out with an earthy element.

Buffalo is a super lean red meat that doesn’t slack on flavor or nutrition. This recipe uses ground buffalo to make a simple and hearty burger. Wild mushrooms, in season now, round the dish out with an earthy element.


20 ounces lean ground buffalo/bison
1 carrot, finely diced
½ yellow onion, finely diced
½ cup dry white wine (Chardonnay)
2 teaspoons olive oil
1 teaspoon salt
½ teaspoon freshly cracked pepper

Wild Mushrooms
2 cups wild mushrooms*
¼ yellow onion, finely diced
2 teaspoons olive oil
½ teaspoon balsamic vinegar
1 teaspoon dried thyme
sprinkle salt and pepper
* Wild mushrooms are abundant at farmer’s market and grocery stores this time of year. A mixture of crimini and sliced portobello mushrooms may also be used.

1. Heat grill to medium-high.
2. In a sauté pan, heat oil over medium-high. Saute carrots, onion, salt and pepper for 5 minutes. Add the white wine and continue to cook until the wine has absorbed.
3. Pour veggies into a bowl and let cool for 5 minutes. Add the buffalo and gently combine with the veggies. Then form 4 patties that are about ½ inch thick.
4. Grill the patties 7-8 minutes per side for medium doneness.

Wild Mushrooms
1. Re-heat the same sauté pan (from the carrots, onion and wine) over high heat. Add the olive oil and let it get very hot, but not burning.
2. Add the mushrooms, onion and thyme and sauté for 2 minutes, stirring consistently but letting the mushrooms brown.
3. Add the balsamic and a sprinkle of salt and pepper and sauté another minute.
4. Serve over the buffalo burgers.
