Recipe Of The Week: Jess Cerra’s Famous Granola

After receiving several requests, chef Jessica Cerra agreed to share her coveted granola recipe. This is super easy to make in your own kitchen, so whip up a batch today to have on hand for a quick breakfast or post workout snack.
Ingredients
1/3 cup canola oil
¼ cup real (grade A or B) maple syrup
¼ cup agave, honey or brown rice syrup
1 teaspoon vanilla
1 ½ teaspoons ground cinnamon
½ teaspoon sea salt
2 ½ cups rolled oats
2 cups puffed wheat, rice, or millet cereal (or combo of all)
¾ cup unsweetened shredded coconut
1 1/2 cups chopped pecans
1 cup golden raisins

Preparation
1. Preheat oven to 275 degrees.
2. In a large bowl, whisk together the canola oil, maple syrup, agave, vanilla, cinnamon and salt.
3. Add the oats, puffed cereal, coconut and pecans and toss together so dry ingredients are evenly coated.
4. Spread out onto a large–rimmed baking sheet or casserole dish (sprayed lightly with non-stick spray) and bake for 75-90 minutes, tossing with a spatula every 15 minutes, until all the ingredients are golden brown.
5. Let cool completely and then toss in the golden raisins. Recommended to store in the refrigerator.
