Recipe: Quinoa Chocolate Chip Cookies

Quinoa Chocolate Chip Cookies

Ingredients
(Yields ~19 Cookies)

1 cup uncooked quinoa, rinsed in a strainer
1/2 tsp baking soda
1 1/2 cup pitted dates
1/4 cup almond butter
2 organic eggs
1 tsp vanilla extract
1/2 cup oats
1/2 cup stevia-sweetened chocolate chips

Preparation
Preheat oven to 350 degrees.

In a food processor, combine uncooked rinsed quinoa and baking soda. Process for around 5 minutes, stopping to scrape down the sides. The mixture should be a crumbly, almost flour-looking texture.

Add dates and almond butter. Process until combined and smooth.

Add eggs and vanilla, and process again until fully combined.

Wait until the mix cools, and then fold in oats and chocolate chips.

Using a tablespoon or mini ice cream scooper, form cookies on a lined baking sheet and flatten slightly.

Bake at 350 degrees for approximately 10 minutes until golden brown.
