Chef Nigel Jenkins pairs with Sweet Potato Hash recipe with his Winter Turkey Burgers, which appeared in the December 2014 issue of Triathlete magazine.
Ingredients
1 pound sweet potato, diced
¼ cup olive oil
Salt and pepper, to taste
1 T minced garlic
½ red onion, diced
½ cup green pepper, diced
½ cup red pepper diced
1 cup black beans
1 tsp ground cinnamon
Directions
Preheat a sauté pan to medium high. Add the olive oil and then the sweet potato. After five minutes continually stirring to avoid sticking, add the remaining ingredients. Stir frequently until all the ingredients are tender. Season to taste. Serves 4.
