A red-wine marinade keeps steak super tender and infused with extra flavor, and the bit of vino has some health benefits too. Not all red wine is created equal though. Stick with younger, dry reds, like pinot noir or cabernet sauvignon, which have been shown to pack in more antioxidants and heart benefits. Enjoy this red-wine marinated steak after your next tough training session.
Wine snob tip: Dry red wines have more antioxidants because skins aren’t removed during fermentation; on average, European wines have the most antioxidants.
Red-Wine Marinated Steak
1 cup dry red wine, like pinot noir 1⁄4 cup olive oil
3 cloves garlic, chopped
1 tsp kosher salt
1⁄2 tsp freshly ground black pepper
1 (1 1⁄2 pounds) flank steak
Add the red wine, oil, garlic, salt, and pepper to a bowl, and whisk together. Add the steak to a shallow container or resealable bag, and pour the marinade over top. Cover and marinate in the refrigerate for at least 1 hour, preferably overnight.
Remove the steak from the marinade, pat dry, and discard the marinade.
Heat a large cast iron skillet over high heat for 5 minutes. Add the steak to the skillet and cook about 7 minutes per side.
Alternatively, grill over medium-high heat to desired doneness, 2 to 4 minutes per side.
