Looking for that perfect summer treat that doesn’t ruin your nutrition plan? Look no further! Macerated berries are big on flavor but low on calories. This simple treat is perfect served alone or over Greek yogurt or frozen yogurt. Macerated berries also make a yummy topping for pancakes, waffles and oatmeal.
Macerated Herbed Berries
Ingredients
2 cups fresh blueberries
2 cups fresh blackberries
2 cups fresh raspberries
¼ cup sparkling fruit juice (lemon recommended)
Juice and zest of one large lemon
1 tablespoon agave
1 tablespoon freshly chopped mint
1 tablespoon freshly chopped basil
*Note: strawberries may be substituted for any of the berries
Preparation
1. In a large bowl whisk together the sparkling fruit juice, lemon juice, lemon zest agave, mint and basil.
2. Thoroughly rinse all of the berries. Add them to the bowl with the herb mixture.
3. Using a large wooden spoon, stir the berries until they are coated with the juices and herbs.
4. Let sit in the fridge for at least 30 minutes, and up to overnight, before serving.
