Portable Potatoes by Dr. Allen Lim

Boiled potatoes have one of the highest glycemic indexes around, which means they rapidly increase your blood sugar giving you a pretty instant burst of energy. So here’s a great way to take boiled potatoes with you on your next ride without them being too hard to carry or hold while biking.

Ingredients:

  • 12 New potatoes (or substitute)
  • Salt and Pepper
  • Olive oil
  • Grated parmesan

You just need a dozen or so New potatoes, along with some olive oil, parmesan cheese, and salt. New potatoes are young potatoes that have thinner skins are sweater and less starchy than other varieties.

First, boil your potatoes in water for 10-15 minutes or until they’re soft when you poke them with a fork. While they’re cooking, lay out a pan and grab your olive oil, salt, pepper, and parmesan cheese. That way, as soon as the potatoes are done, you can take the skins off by hand—but you may want to wear gloves because they’re really hot. Or, you can leave the skins on if you’re in a hurry. But, while they’re still hot, I like to drizzle them with olive oil, and then sprinkle/rub them with salt and grated parmesan cheese. You can even take that oily, salty, cheesy paste and rub more onto the potatoes. They cool pretty fast though, so to get the parmesan crusted goodness, you’ll want to work fast.

At this point, tightly wrap them in aluminum foil—I like to wrap two together—and voila!

Many of the pro riders I’ve worked with love this recipe because they’re so easy to make, and they’re easy to eat while riding. But really it’s that instant burst of energy that keeps them coming back for more—in fact, it’s best to eat one or two potatoes every hour during a ride.
