The simplicity of grilling and the flavors it evokes are a wonderful part of summer. Pork chops are an often forgotten meat, but should be on your weekly grocery story list because they are high in lean-protein, affordable and quick to grill. If you haven’t tried grilling broccoli or broccolini, you are missing out. Even the stalks are delicious with a nice crispy char on them. Serve this meal with your favorite side and a salad.
4 -5oz boneless pork chops
2 small bunches broccolini
2 TBSP olive oil
salt and pepper
1. Heat grill to high.
2. Toss the pork chops with ½ TBSP olive oil and season with salt and pepper.
3. Toss the broccolini with the remaining olive oil and season with salt and pepper.
4. Turn the grill to low. Cook the pork chops 8-10 minutes per side with the lid closed (pork should be medium done on the inside). Let rest 5 minutes before serving.
5. Cook the broccolini for 5-6 minutes per side, until a nice char develops.
